# Expert Advice:

01 -
  • They come out impossibly crispy on the outside without any of that heavy oil feeling afterward.
  • The whole thing takes barely half an hour from mixing bowl to plate, making it perfect for unexpected guests or when you're craving something interesting.
  • You can adjust the heat level completely to your preference, so even people who avoid spice can enjoy them.
02 -
  • The consistency of your batter is everything—too wet and they won't hold together properly, too dry and they'll taste chalky rather than tender inside.
  • Don't skip the oil spraying step or try to use just a brushed-on amount; the mist from a spray bottle creates way more even crisping than anything else.
  • Your air fryer might cook slightly faster or slower than mine, so start checking around the 12-minute mark rather than waiting the full 15.
03 -
  • Keep a small spray bottle of oil near your air fryer for this recipe—it's the difference between golden and pale, and makes the whole process feel controlled.
  • If your bhaji are browning too fast, lower the temperature to 160°C and give them a few extra minutes; every air fryer runs a bit hot or cool depending on the model.
